Red Velvet Stack Pancakes 🥞

Ingredients
  

  • 1 box box of  red velvet cake mix (or any red velvet cake mix)
  • 1/3 cup plain flour
  • 1/4 tbsp  baking soda
  • 1 good pinch of sea salt
  • 1 egg (room temp)
  • 1 tbsp vanilla extract
  • 1 1/4  cups buttermilk
  • Butter/oil for greasing

For the Glaze

  • 1/2 cup icing sugar (sifted)
  • 2 tbsp milk
  • 1/2 tbsp vanilla extract (clear vanilla for a bright white glaze ✨)
  • A pinch of salt

Instructions
 

  • 1️⃣ In a bowl, whisk all dry ingredients together.
  • 2️⃣ In a jug, whisk all wet ingredients until just combined—don’t overmix!
  • 3️⃣ Heat a pan over medium-low heat & lightly grease with butter or oil.
  • 4️⃣ Pour 1/4 cup of batter per pancake, cook until bubbles form, then flip.
  • 5️⃣ Stack them up & mix the glaze until smooth.
  • 6️⃣ Drizzle glaze over the pancakes.
  • 7️⃣ Serve with fresh berries, extra glaze & enjoy!
